BTI selected nine key imported lager brands as competitive products for Pilsner Urquell’s comparative tasting. A blind tasting panel of expert beer judges commenced in our controlled tasting environment, which maximized output and minimized any environment influences. Using 3 flights for method evaluation, they ordinally ranked their preferences using A/B comparison tastings. BTI concluded by a significant margin that Pilsner Urquell had the best flavor of the group. These results and historical BTI rankings for the overall pilsner category demonstrated that Pilsner Urquell was a benchmark for the imported lager category of beer. SABMiller used BTI’s recommendations to promote the exceptional aroma, flavor and texture of Pilsner Urquell over comparative brands as demonstrated by the results of the blind tasting.

Results

A highly success international media campaign was launched based on the licensed results from BTI imported lager tasting. BTI also consulted, collaborated, and participated in media launch tastings, interviews, and beer dinners in New York and Los Angeles to support the US media campaign.

A comparative tasting of your product versus a competitive set of your choosing by the professional panel using the BTI methodology and additional attribute ranking methodologies and custom characteristic or marketing keyword tests. These tastings are geared primarily for testing marketing claims prior to advertising campaigns and any favorable results could be licensed for those campaigns, like Grey Goose, Jim Beam Black, etc.

It could also include the addition of two more panels, a trade panel and a small scale educated spirits consumer panel for additional feedback and claims testing. Or a large scale consumer panel of 200 demographically specified or diverse consumers that would be recruited to test A vs B (“Pepsi Challenge") type comparisons of a client brand versus a key competitive brand. The 200 person panel size is large enough to fulfill FTC guidelines for advertising consumer-based claims or endorsements.

Our panel of trained sensory experts used BTI's blind tasting methodology to provided highly detailed flavor notes and 100-point scale ratings for each of the new beers and conducted a benchmark analysis for each beer style.

Results

The report showed that several beers suffered from flaws of dimethyl sulfide (DMS), inappropriate esters, or aged hop condition. BTI assisted the brewmaster in developing marketable, craft ale recipes at a regional brewery with a traditional lager portfolio. BTI’s developmental tastings provided the necessary feedback on the characteristics, flaws and quality of the hoppier, new craft beer styles. Using BTI recommendations for malt balance, specialty grains and premium branding strategies, the brewery used the study to refine specific styles to gain market share in the aggressively growing Canadian craft beer market.

A developmental tasting where we either analyze and pick the best recipe for a final product from a set of recipes, or work with a your or your supplier in a back and forth manner to improve one recipe with feedback for each subsequently refined recipe until it is optimized.

Challenge

Conduct a series of confidential research tastings to test parameters of cold storage for unpasteurized craft beer. Determine point and degree of flavor degradation in various retail and wholesale storage scenarios.

Solution

The test parameters specified a comparison of several dozen unpasteurized bottles provided by the craft brewery client and several dozen pasteurized bottles of commercial "macro" beer. Every two weeks for six months, the BTI professional panel would evaluate the beers using BTI’s proven methodology and blind tasting. Rankings were done to evaluate each beer’s flavor freshness attributes. Tastings notes would record signs of quality deterioration from various factors including temperature, oxidation, light exposure, and hop degradation.

The client alleviated the effect of varying storage conditions by launching a regional production facility to maximize freshness of their unpasteurized highly perishable product.
